Fiesta Ole - Bethlehem

This is my favorite spot for Mexican food in the Lehigh Valley. The salsa and tortilla chips are absolutely fantastic! I often go for the chimichangas, which are crispy and packed with cheese. The fried ice cream is not only visually impressive but also incredibly tasty. While it has a twist compared to traditional Mexican cuisine, it definitely brings its own unique flair. The ambiance is pleasant as well. They've just updated their drink menu, and you must try the skinny mojito!

I recently celebrated my mother's 50th birthday at this restaurant, and I must say that the wait staff was excellent and incredibly attentive. Our glasses were never empty, and the food arrived promptly. For an appetizer, we ordered shrimp nachos with freshly made guacamole, both of which were delicious. For our main course, we had chicken and beef fajitas, as well as enchiladas verdes that had a bit of spice—something my mother really enjoyed! These dishes were served with rice and refried beans, all of which was very good. For dessert, we indulged in churros filled with caramel sauce and accompanied by a chocolate dipping sauce, which were simply irresistible! By the time the cake was served, everyone was too full to eat another bite! I loved the decor, and the overall ambiance was fantastic. I would definitely come back here again; they created a truly memorable evening for my family. Thank you!

I've heard a lot of comments about this restaurant, which originally opened in Emmaus. I decided to try the new location in Bethlehem about two weeks after it opened. Unfortunately, the service was lacking, and the value for the meal was disappointing. I ordered a beef taco salad, which came in a shell about the size of a cereal bowl. If it weren't for the coupon I used, I would have found it to be completely overpriced.

I don't visit this restaurant frequently, but the times I have been there have been wonderful. The service is excellent, and the staff is incredibly friendly. Additionally, the portion sizes are good for the price, and the food is genuinely Mexican! I recommend stopping by if you're looking for a cozy spot to enjoy a meal.
