Asado De Cordero - Calbuco

Chidhuapi is a small island next to Puluqui Island in the Calbuco archipelago, located in the northern part of the Chiloé archipelago. The island is known for its people working in the salmon farms, as well as for being one of the few places where you can try the traditional dish of lamb on a stick, known as "asado al palo chilote". This dish requires careful attention from the cook, who must continuously tend to the fire and rotate the meat for over three hours.
