Pishon - Chatswood

Super cute cafe in the new Chatswood Interchange complex.

I have always wondered what Pishon meant and looking at the concept assumed it was a fancy french word to slap on a French inspired bakery cafe. Anyway, a quick google search revealed it was in fact Hebrew and was The Pishon is the first of four rivers in Eden " Ok then…. Anyway, I always give a good bakery a chance and wondered into their shop on several occasions looking to sample their cakes. Pishon offers french inspired breads and cakes but with an Asian twist. I have no issue with this because if it tastes good, it tastes good! However, what I am not comfortable with is the $6.80 charge for a tiny piece of cake. We arenot talking about cafe sized cakes, we are talking about slices comparable to 85 Degree but 24-30% premium. However, they do have a prime location with plenty of thoroughfare and people love to be seen so it works well for the concept.  The cakes are your standard fare Asian inspired classics but less sweet. The issue I have with is that in the process of balancing I guess a more health conscious approach to some of these cakes, they lose their edge in what a dessert needs. It just doesn't have the intensity of flavour or the original flavour in fact of some of the classic cakes they represent.  The breads are also and other pastries resemble bread top and 85 degrees.

A place in Chatswood Interchange that sells cakes and coffee. I tried the red velvet which had a nice flavour but was chewy and very dense. I have tried the sponges which were definitely lighter but not great with flavor.

Nice cake and coffee. But,please improve service quality. Especially,this morning a girl staff of counter. We have no idea what made her angry. Or she always face angry to customers .

Lovely cozy café! Had the purple sweet potato latte and my friend had the lemongrass and ginger tea (cold). Love the cute fitout. Lots of ppl doing a bit of work. Can see the trains go by which was kinda cool. Was going to try cakes/breads but too busy talking! They have some uniquely Korean selections you don't see everyday.
