Ik ben het volledig eens met Kris, Lede: het hoofdingredient van het voorgerecht bij de lunch bestond uit een cilindertje makreel, met de grootte van een vingertopje op cm) en het hoofdgerecht bestond uit minieme blokjes rundswang! wel allebei met fijne en lekkere maar ook minimale garnituurtjes. It’s been five years since Michaël Vrijmoed was crowned Chef of the year by the GaultMillau guide after being “great tomorrow for the flanders” shortly after the opening of his restaurant in 2015. Since Michelin gave him one, then in 2020 the very popular second star, which is more than deserved. It is in a superb master’s house with high rolling ceilings and superb glazed woodwork located in the center of Gent, that is the restaurant Vrijmoed, close to the mythical Château de Geraard De Duivel. After a warm welcome from my old friend Benjamin De Buck, we were comfortably installed at the table “in showcase” with city views! Two menus are offered including a fully vegetal and this is what we chose while inserting two dishes of the “animal” card in addition. From the beginning to the end it was really sumptuous. A lot of visual elegance as well as olfactory and gustative, really reversing plates like this double service on the hyper-thinking cucumber and falling parterre. Or this main dish around different beets with vegetal brothel sauce and a fresh salad with multiple aromatic satellite decorations. Another surprise, in pre dessert a combination of mushrooms “no blue” with cocoa powder and blue cheese (the one). Scary. In agreement, a kriek with a very vivid avidity blended well into the dish. The langoustine we had in extra, was also a great moment, roasted and served on a bisque and vegetable oil, more apart from the squid tagliatelles, served in bowl on an extremely balanced and succulent juice, really top. The most impressive was balances, and sauces. Juice, lacto-fermentation, emulsified oils, a lot of flavours and surprises but still in balance. In the room a beautiful team at the service, very present, fast and efficient, hyper precise in their eyes, attentive to the least detail missing at the table. As for the wines, Benjamin De Buck, former sommelier of the Oud Sluis de Sergio Herman (3* and 20/20) offers a great talent, offering selections of classic wines but with very interesting choices.
