Best I've had, quite similar to the one I had in Valencia back in 2010. Their pintxos are good, but I recommend to focus on their paella (negra or chorizo) as it's seriously what you would get in Spain. p.s. their tarts de chocolate is gooooood
Ate at Hola Bombon with my girlfriend last week and really enjoyed the evening. The staff are extremely welcoming. Were not big drinkers ; but I had the beer with calamansi foam and really enjoyed it. My partner in crime had a regular mojito and there was no complaints. We tried alot of different dishes. My favourites were the tanigue taco, the mollete, the gravalax with crab salad, the bravas (uniquely made and the paella negra. We have tried paella negra in other restaurants in Manila and this was the best one! They also added a love heart to my dish, little things like that cap off an evening. Recommend to anyone that likes Spanish food, or wants to treat someone.
I went to Hola Bombon on Sunday as I heard they have a promo, called Hola Domingo. It's a fine dining eat all you can on pintxos, tapas, one paella and churros the most beautiful aspect of it is that you feel like entering any nice restaurant in Spain, the pintxos are displayed on the bar and the interiors really show attention to detail. For the pintxos we had ensaladilla, boquerones, salmon, mollete with pork belly and chupitos de gazpacho. We also ordered Lope De Vega and Tenerife Sea, their two best sellers for cocktails, super yummy and, as their supervisor said, very instagrammable : Chef is Spanish and the manager is also from Spain, I believe feels like home.
Wow I would have never expected to get this high quality food in Poblacion. Three things that separate Hola Bombon from the rest: the food is absolutely outstanding. From the pinchos to the paella and the dessert, nothing was short of perfection. Try their FOIE, the MEJILLON, the SARDINA, and please make sure you get the CARRILLERA. Their desserts are good too, but (only but there's no fruit based dessert the service and the interiors: it made me feel happy and comfortable. Their waiters smile, always refilled water, they know their menu. Very well organised. The manager (or owner? was also there, but I didn't have a chance to speak to him the chef: I think he used to work for Rambla in Salcedo. Having a chef from Barcelona sends your game to a different level. He also came out to ask how was our experienced and made us feel special. I absolutely love this place and I'll go back as often as I can. p.s. they have limited parking, but better than nothing in Poblacion! p.s. 2 I didn't try the cocktails but I'll go back sangria was really good.
Lovely place for date night or a night out with friends. Highly recommend their duck paella and croquetas de manchego. For dessert, the creme catalan. We also had chorizo and fried oysters as well as the tarte de santiago and torrija, also quite exceptional.
