Max's chain of restaurants is a well-known staple across the Philippines, with locations in most major cities. Their claim to fame is their delicious fried chicken, which they say has built their reputation. This particular location is in the bustling heart of Vigan City, near Calle Crisologo. Parking can be tricky in the area, but we were fortunate to find spots in front of the restaurant. The restaurant itself was crowded, but we were quickly seated by the air conditioner. We ordered a variety of dishes including sinigang na baka (tamarind beef soup), pinaputok na tiyan ng bangus (popped salmon belly), crispy pata (pork knuckles), crab meat fried rice, and other specialties. For dessert, we enjoyed pastillas con hielo and an ube leche flan shake. The food arrived promptly and was delicious, especially when paired with bagoong isda. The service was quick and efficient, catering to the large volume of customers. Overall, Max's is a solid choice for a meal in the area, especially if you're exploring Calle Crisologo and looking to try some traditional Filipino dishes.
