Root 66 Food Truck Abq - Albuquerque

Root 66 recently posted about upcoming events and new menu items on their Facebook page. They frequently incorporate their brisket into various dishes, such as nachos and burritos. The nachos are particularly outstanding, with a delicious cheese sauce, cauliflower, jalapeños, carrot butter, guacamole, and their tasty vegan brisket. While they have had some issues with timing and supply, they are committed to improving and have taken steps to address these challenges. I highly recommend trying them out!

This restaurant offers some of the best vegan comfort food you will ever find, with a Mexican and New Mexican twist! All of their dishes are fantastic, but my personal favorite is the pollo asada burrito. Whether you are vegan or non-vegan, this food truck is a must-try.

Food reviews look good, but if we try to order, they are already sold out for the day, not the orders due to high quantities or waiting times are more than an hour.

It was so sad to listen to root 66 gail that has returned to her home state. can not wait until they interview with potential chefs to run the food truck and commercial kitchen and open it again!

I went on a Sunday and caught the brunch menu. My girlfriend said she had never had vegan biscuits and gravy that tasted so good and my meal was also incredibly delicious. The prices were incredibly low for the great quality of food and the staff were incredibly friendly and helpful. Definitely check out this place if you are in the area, so happy to have a vegan friendly eatery so close to home!
