While the food is still great most of the times, particular the raw fish courses, I’m missing the warm presence of his wife in the dining room, because always had more to say about the food than just repeating what’s written on the menu. In praise of the chef, I have not had one disappointing fish course in 2 years. He knows how to balances the sweetness of raw scallops with the brine of olives by cutting them with just the right amount of acidity. He had a peach foam desert on the menu that was delicious that I wanted to lick the plate clean.

Simply extraordinary! This tiny storefront on Main Street in charming Allentown, NJ, is the real deal. Inventive menu and great presentation are matched by preparation and most importantly flavor. Not your traditional Italian restaurant by any means, chef Randy Forrester coaxes out the best in his super fresh ingredients. The Anchovy Laquered Scallops were the best I’ve had in years. The trumpet mushrooms and fried garlic sang in unison with the scallops and anchovy sauce. The Local Duck prepared sous vide was perfectly cooked with a hint of hay smoke added during the sear. Also not to missed, the Tonnarelli pasta was so simple you could make it at home. But you won’t because it’s just so good here. My dessert, Olive Oil Semifreddo was ethereal. Chef Forrester’s wife and partner, our server this night, provided the backbone to the night with informed conversation, many smiles, hyper efficient service and consummate professionalism. This byob deserves to be on every serious foodies radar.

Though the menu was limited , we enjoyed our meals though I felt that my husband and I enjoyed our pastas more than our friend who had the duck. I was just surprised that we would have been charged $25 per person if we had cancelled our reservation. Thank goodness we didn’t have to. We plan on returning in the near future and we wish the owners success.
