Flatlanders Pizzeria - Baldwin City

We got used to fire oven and specialty pies while living in New England, so it was an amazing surprise to find such a great pizza place in Baldwin when we moved here. The cheese sticks are my favorite thing on the menu, but I honestly haven't had one bad thing yet. My favorite spot in town!

The pizza here is absolutely delicious, and the service is truly exceptional. In fact, the pizza itself is quite special. The pies aren’t very large, so sharing among more than three people might be difficult. I highly recommend the margarita pizza—it's unbelievably good. When a pizza that is considered one of the simplest can be this satisfying, you know you’ve found something remarkable. The staff is warm and welcoming, and they genuinely want you to enjoy your experience. There are board games and fun activities for both kids and adults to enjoy while you wait (and you will wait a little while, because fresh pizza takes time). The entire atmosphere makes you feel as though you’ve stepped into the home of a distant cousin who turns out to be fantastic. I will definitely make the 40-minute drive back here again soon!

There’s pizza, and then there’s wood-fired pizza. Flatlanders serves pizza the way it was meant to be enjoyed. Unlike the frozen or packaged dough with ketchup-style sauce you’d get at chain places like the Hut or Dom's, Flatlanders uses their own unique recipe for dough, which is made fresh right before your eyes. They also prioritize local ingredients and toppings, some even sourced from their own garden. How do I know this? Just ask the owners—they’re always around, preparing the food and happy to chat about pizza with everyone. The service is incredibly friendly, and the pizza is absolutely delicious! It’s definitely worth the drive.

I live nearby and have passed by this restaurant numerous times, thinking I should give it a try. Today was finally the day. I took my daughter and her friends for lunch, and I was impressed by the wonderful buffet they had set up. Upon entering, they asked us what kind of pizza we wanted. The wood-fired brick oven really makes a difference—this pizza was exceptional! The crust was light, airy, and crispy all at once, reminiscent of a great New York-style pizza. All the ingredients were high quality and fresh. The salad bar was also fantastic, filled with fresh, crisp greens. I can confidently say I will be coming back many times. If you haven't tried this place yet, you should definitely stop by. Excellent!
