But Tonino and the family, who for over thirty years own and manage this trattoria are splendid examples of schietta ability to keep alive the traditional Teramana cuisine,. in that land of 'Abruzzo - crucible of countless people (from the Vestini that invented the arrosticini, the Peligni, the Marsi, the Frentani, the Sangri etc.) - considered the capital of the world gastronomy of the West, as home of the school of the most ancient chefs of the globe: what in Villa Santa Maria (where was born San Francesco Caracciolo, the name of the chefs today) It is from this school that since '500 they dislodge and go to service to European noble families. Well, at the Gran Sasso with my friends and the Mayor of Basciano we enjoyed a handcrafted lonza, the guitar with the pallottines , the gnocchi with the ragù, a remarkable roasted sheep, sauteed vegetables, all watered by an excellent Montepulciano d'Abruzzo, from the obvious hint of marasca and, finally, a magnificent traditional sweet pizza. All perfectly prepared with quality ingredients. So much is that despite the generosity of the portions and the 250 kilometers of the next journey, the digestion was perfect, as it happened already in the 12th century to Federico Barbarossa, that while having liver problems, the chronicles report that in Abruzzo he ate well and digested splendidly. Bravo Tonino! When I understand again from those parts, I will know where to recog with taste, harmonious combinations and succession of flavors, renewing the pleasure of wise preparations with centuries of history.
We stopped on the journey back from the holidays, Mr. Antonio greeted us with sympathy and kindness. Paccheri with fresh tomato and basil,caprese with buffalo mozzarella, all fresh.
