Super Mario’s Taco Truck - Bellingham

Cash only! I always feel a bit odd posting photos of burritos, as it feels like I’m showing off what I've taken a bite of, somehow. Super Mario offers the best burrito in the city. I often think about the wonder burritos—they're simply delicious. I always order the veggie burrito because it's hands down the best. Even though I’m not a vegetarian and usually opt for something with meat, that’s not the case here; it’s veggie every single time. And it’s not just small pieces either—there are whole broccoli florets and slices of cauliflower, which are genuinely tasty vegetables. I can't recommend it enough!

The Asada Miracle Burrito was just as large as everyone claimed, and the verde sauce was fantastic. I would definitely buy it again if I'm in the area!

This has been my favorite burrito spot in Bellingham for years. I know I can always count on finding my delicious Asada burrito waiting for me at this corner. I always go for the Miracle Burrito and have never ordered anything else, and that makes me really happy. I can’t decide whether I prefer the red or green salsa, so I tend to load up on both. Luckily, they have plenty of bottled salsa on hand, always chilled and ready to go.
