In Ben Tre, we made a stop to visit a homemade factory of their famous coconut candies called Keo dua. The process is absolutely artisanal, the mixture is made in a cauldron while constantly stirring. Once it reaches a sticky state, pieces are taken out and stretched into rectangular shapes, allowed to cool slightly, and then cut and wrapped in a very thin paper made of rice paste. They also make rice popcorn, sweetened with sugar or honey. And rice wafers to wrap the famous Vietnamese spring rolls, which are exquisite. It is surprising to see the laborious and precise work they put into making the rice wafers, especially in handling them, as they stretch them until they are almost transparent and then let them dry without breaking. The smell in the house is a delicious mix of toffee, fried rice, and coconut. Something that I still remember in my olfactory memories. An interesting place to visit.
In southern Vietnam, there are several islands at the mouth of the Mekong River. Along the Ben Tre trail, we stopped at a renowned homemade candy factory known for their coconut sweets called keo dua. The process is completely handmade, starting with boiling the dough until it reaches a sticky state. The pieces are then extracted, shaped into rectangular forms, cooled, cut, and wrapped in delicate rice paper. Additionally, the factory produces rice popcorn sweetened with sugar or honey, as well as rice clays used to wrap Vietnamese spring rolls, which are said to be delicious. It is impressive to see the intricate and precise work that goes into making these candies, especially in handling the rice paper which is stretched almost transparent before drying. The aroma of the factory is a delightful blend of fried rice and coconut, a scent that lingers in my memory. Overall, it is a fascinating place to visit and witness the craftsmanship that goes into creating these traditional Vietnamese treats.
