Feedback gevenAlessia expertly guided us through the production of Lambrusco in the three methods of adding fizz to the sparkling wine of Emiglia. We started in the vineyard and traveled through the cellar to the bottling room, all rapt with attention at our fantastic host. An outdoor tasting in the producer's beautiful garden of wines with some mortadella and parmigiano followed again, wonderfully curated and hosted by Alessia and team. This is a great first visit of a Lambrusco producer you get an incredible amount of detail about the grape varietals that make the various wines (and get to touch, smell and taste the grapes themselves which tell the whole story! .
Our food tour guide in Bologna recommended us to come here and so we planned in a Friday trip with this for lunch and the Hombre Panini motor museum for later in the afternoon as a day out from Bologna. Giulia provided an excellent tour of the small operation here making balsamic vinegar from their own vineyards. We saw the whole process and were lucky that day that they were busy heating the must, the smell was lovely. I now know much more about the ageing and blending process and also the different grades available. Very useful insight also into the reason that cheap stuff in the supermarkets is so very different to the real thing. After the tour we had the set lunch which was wonderful and excellent value. If you are in the area and looking for a visit to a producer I can heartily recommend this one.
Recently visited Acetaia Paltrinieri. Our tour company arranged for our visit per our request to see a balsamic farm. The tour guide was very knowledgeable and answered all our questions with great clarity. The sampling of the various products was the highlight of the tour. We were served a wonderful light lunch after the tour. The food was delicious and the restaurant was rustic and beautiful. I would highly recommend for those who are interested in the production process or even for a good meal in an atmosphere without huge crowds encountered in the typical must see sites in Italy.

Fantastic discovery! Acetaia is open in the morning with a guided tour, with a degotation of vinegar of different types. in the end you will see their products for sale and it is difficult to ocire empty-handed because they have introvable products. from the dop you will not find at the supermarket but only from the manufacturer. beautiful room where ripe vinegar is great location for the evening for a dinner based on balsamic vinegar. we also had dinner because we had 1 pack of smartboxes and were very kind because they are gluten intolerant and prepared sweet cake for me as well as offers me crecker for dinner.
