My Pho - Boone

I'm pretty discerning when it comes to Asian cuisine. And when it's fast food I keep my expectations fairly low. But I was pleasantly surprised by My Pho. It's fast, inexpensive, and convenient. And the vegan broth is quite flavorful. Lots of fresh veggies to choose from, including jicama. The mock meat soysage is a nice addition, and can be added to the pho soup and the banh mi sandwhich. Highly recommend this place for a quick bite. Offers dine in and take out.

More vegetables and their tapioca beads to make vegan

Came here for (vegan) Banh Mi, who is heavily advertised, but there were none. They only had tea and Pho. Looks like the Pho could be made vegan.

And the vegan broth is quite tasteful. Many fresh vegetables to choose, including Jicama. The Mock Meat Soysage is a beautiful supplement, and can be added the Pho soup and the banh mi sand.
