Ik sluit mij aan bij het vorige commentaar, lekker maar niets speciaals. Het interieur vond ik teleurstellend, donker en afgeleefd. Helemaal geen keurig gesteven witte tafelkleden zoals op de foto's, maar ongezellige houten tafelbladen die een onfrisse indruk gaven, met daarbij uitgerafelde, versleten servetten. It was a fantastic experience to visit Atelier Maple on Saturday, October 30th. We were served a 6-course 'Menu Maple', which was very finely balanced. We started with a delicious aperitif, a fresh but spicy cocktail that paired perfectly with beet ravioli. The ravioli themselves were described as a stroke of genius. The Japanese hamachi with pumpkin served as the second dish was a success, with the addition of caviar adding the perfect finish. A surprising and innovative apple cocktail was chosen to accompany this dish. The hazelnut calf was sublime, with the hazelnut hint being a standout element. The fresh and hot soup served with it was the cherry on top. The North Sea fish confit with parsley root was the next highlight, with the fruity Valencian wine pairing perfectly with the flavors. Chef Timothy explained their commitment to using only fresh products to ensure quality on the plate. The main course of pheasant with chicory and Fine Champagne was perfection in every detail. The 'Ermita de San Lorenzo' was the ideal partner to finish with its strong herbal notes. The meal concluded with the nyangbo, a real explosion of flavors, paired with another delicious cocktail. In conclusion, Atelier Maple offers excellent craftsmanship in a beautiful art deco style. Chef Timothy and his team are aiming for their first Michelin star, and it seems only a matter of time before they achieve it. Hostess Lynn ensures smooth service in the dining room, and it is satisfying to see her contributing to the success of Atelier Maple as a former student.
