Mexico Burlington

Absolutely fantastic! This is the best restaurant in Kit Carson County, and it’s budget-friendly as well. The atmosphere is lovely, and the service is outstanding.

This delightful restaurant is situated on 14th Street in Burlington, Colorado. For dinner, we enjoyed enchiladas and flautas, and the food was truly authentic Mexican cuisine—it was amazing! They also offer gluten-free and vegan options on the menu. To finish off our meal, we indulged in some Mexican fried ice cream, which was a large scoop of fried ice cream served in a flour tortilla bowl, topped with whipped cream, chocolate syrup, and a cherry. This dessert elevated our meal from great to fantastic. We will certainly return if we find ourselves in the area again.

During our stay in Burlington, we stumbled upon this restaurant, and wow, the food was incredible! The service was exceptional as well. Although I’m only here for two weeks, I’m certain I’ll visit this place at least a few more times before I leave. Thank you so much for the wonderful experience. I loved it!
