Aya: Shop 14, G/F, Yik Lee Building, 26 Kin Tak Street, Yuen Long, Hong Kong. 12 minutes walk from Yuen Long MTR station, Exit A. Tel: +852 6350—8637. Lunch costs around HKD90/head. Food quality: Shrimp miso soup noodles, original pork bone soup noodles, black garlic oil soup noodles. Summary: This famous noodle shop in Yuen Long is highly recommended by locals. The chef is Japanese and will personally bring you the noodle bowl with a shout. It feels like a brief visit to Japan. The shrimp flavor in the three soup noodles is the most fragrant. Each bowl comes with a piece of seaweed with colorful patterns. The soft-boiled egg is cooked perfectly, with a runny yolk. The char siu is thick and has a delicious pork flavor. The original pork bone soup and black garlic oil are tasty, but the noodles are on the lighter side, not for those who prefer strong flavors. There are three types of noodle bases to choose from: wheat noodles, black pepper noodles, and the daily special. I chose wheat noodles, which were firm and chewy, and you can even order a half portion. The environment may be a bit cramped, but it has a cozy Japanese ramen shop feel. However, the prices are not on par with other affordable ramen shops, with a bowl costing around $80. In comparison, this place is quite similar to the popular Fisherman's Noodle in Mong Kok, but Fisherman's Noodle wins in terms of soup base and noodles. However, Aya's egg and char siu are superior. I think they could enhance the richness and depth of their soup base to bring out the flavors of the ingredients more.
I wanted to try this small shop for a long time, because I love eating dipping noodles. Finally had it today! They opened at 11:30 and there was already a line. The shop has a Japanese feel, with about ten seats. We both got the shrimp miso soup base. One order of black pepper noodles, and one order of wheat noodles, both 200g. We also got extra eggs, and when we asked for more, the server said each bowl already comes with one egg. A Japanese chef personally poured the dipping soup, it was hot and delicious. The 200g portion of noodles was quite big, the black pepper flavor was intense but balanced, and had the right firmness. The broth was rich and flavorful. Will definitely come back next time!
