It is often enjoyed with lamb, but the cheese-filled variation, known as peynirli gözleme, is also popular. This version is similar to a cheese crepe, often served with a spicy tomato sauce.
Gözleme is a thin flour dough, seasoned with butter and always cooked on an oval-shaped 'pan' over low heat. In Turkey, it is typical to eat it with lamb but the 'peynirli gözleme' is also very common, which would be equivalent to a cheese crepe for us. This is usually served with a kind of spicy tomato sauce, the combination of strong cheese and spicy tomato will make you stop at every stall you see. On our way out of the underground city of Derinkuyu, we found this restaurant where they allowed us to take some photos of the process of making a delicious cheese gözleme that was delicious!
