Yes, I am from London and did change my holiday to Puglia deliberately to enjoy your restaurant as recommended from the English TV pgm with Dermot O’Leary. I did read the TripAdvisor reviews, but only the ones written in English. I should have read the Italian ones as well as they told a very different story. The food was delicious and I loved the textures and tastes. But the experience as a whole was severely let down by the service. We were one of the first customers in that evening and the waitress explained the philosophy of the vision and that when each course was delivered to the table the waitress would explain the context and journey of the dish. Amazing! This was not to be the case. The first indication was that the cracked water glass, when we could eventually get someone to the table, was finally replaced. This, though small, was an indication of the evening. Long breaks between courses, empty plates not removed, the promised explanation of the dishes creation not done and a growing number of new customers lining up waiting to be seated! When we finally wanted to pay it took over 25 minutes to get the bill! This marred the experience of the food, and the meal. Whilst I do understand that restaurants get busy, this excessive compromise isn’t good at all, and not what was promised. I do admire the vision and journey of the restaurant’s success, and the growing popularity since it was reviewed on the television, the product is no longer what it was! Service was terrible, waiting staff running all over the place and the owner not welcoming but desperately clearing empty plates with a scowl! Please return to your original vision! Don’t accept big bookings, reduce the number of covers and retrain your waiting team then you may well enjoy your vision as you did in the beginning. I wish you all the best.
Gustavo Braceria is my favourite treasure in Puglia. When I want to make a good impression on friends or family, I invite them to Gustavo : I go there since 8 years now, each Summer visiting the owners Carmela and Gigis unique spot in the middle of nowhere , Salento, Puglia. They reinvent themselves each and every time even if the meals are composed as a fixed menù you don 't get to choose the courses, they just come up and you eat what is on the table. Their signature pieces remain ; like the delicious Maialino Nero meat as second course, or the tempura of regional vegetables to only name a few. Not to forget with the km0 concept, meaning biological and at the same time regional. New is since two years is the delicious Mirto an after dinner digestive/drink that Carmela and Gigi are producing themselves out of regional berries from their garden. The structure and the key pieces stay, everything around is vivid, dynamic and fully passionate. Very recommendable spot can 't wait to come back.

When I discovered this place I am absolutely in love with it, because the location is really beautiful, both inside and out. fixed menu that varies according to the season, as the products to the courses go from appetizer to dessert, with strong piece black pork with side dish of potatoes and mashed. You'll dream of it at night! we brought a lot of friends and were always super satisfied. very courteous and professional staff. Very well!
