I have a picture to share! I had the veggie burrito (without rice or cheese), and it was delicious. It was packed with vegetables and had a nice spicy kick.
With the limited vegan options at DFW Airport, this restaurant is a solid choice. The food was well-prepared, and the server was very helpful in pointing out which menu items could be modified to be vegan. It's conveniently located at E31, accessible from Skylink, which is a plus. I tried the mushroom spinach enchiladas (apologies for starting to eat before taking a photo), and they were surprisingly good for airport food. I chose to skip the ginger rice (which is boiled with butter) and opted for double black beans instead (just asked to hold the cheese). The black beans were excellently seasoned and served at the perfect temperature. Other vegan options include the rainbow chips and salsa, guacamole, a veggie burrito (just ask to hold the cheese and ginger rice), and a vegetable combo (be sure to hold the mini black bean adobe pea).
