When I ordered at the restaurant, I did not return any fish sauce in tofu green curry and ca. 5 minutes later the manager came out and apologized and explained that only the yellow curry can be ordered vegan. She was familiar with what vegan meant and it was nice of her to take the time to explain instead to use only the green curry without knowing that it was not vegan. The yellow curry ended fantastic and the spring rolls. With so few vegan options in Guam restaurants it was nice to have a large and delicious vegan duck.
We were initially skeptical that any curry could be made vegan due to non-vegetarian curry paste. Therefore, we assumed that the previously mentioned yellow curry was not actually vegan. I ended up having to settle for gluten due to limited menu options. Finding options that were both gluten-free and vegan seemed challenging. Initially, beef was served to us without our consent, but when we returned it, they replaced it with rice paper rolls.
We initially thought it wasn't possible to make a vegan curry due to non-vegetarian curry paste. Therefore, we assumed that the yellow curry mentioned in the menu wasn't actually vegan. I had to compromise by eating gluten since we couldn't find other options on the menu. Finding gluten-free and vegan dishes was a challenge. The restaurant mistakenly served us bark, but quickly replaced it with rice paper rolls when we returned it.
I phoned ahead to inquire if they could accommodate vegans, and the woman who answered assured me that they could (no fish sauce, milk, etc.). However, when I placed my order at the restaurant, my tofu green curry arrived with fish sauce. Approximately five minutes later, the manager came out to apologize and explained that only the yellow curry was vegan. She was knowledgeable about what veganism entailed, and I appreciated her taking the time to clarify rather than serving the green curry unknowingly. The yellow curry was excellent, as were the spring rolls. With limited vegan options in Guam restaurants, it was a pleasure to enjoy a plentiful and delicious vegan dish.
