This new restaurant in Huntsville is a fantastic find. They offer a menu with options like salads or bowls (which come with rice), with the choice of black beans or kidney beans and any vegetables you desire - avocado being the only exception that costs extra. The dressings are mostly vegan, marked with PB, K, P, V, and the Zilantro Lime Dressing comes highly recommended. Many of the daily soups are also vegan-friendly. They also offer smoothies which I have yet to try, but I have no doubt they are delicious. You can find this gem in the Arnaud's Food Truck Park on Montgomery Rd, towards the back on the left.
