The panella is a typical street food of the Palermo cuisine and this can wrongly not give justice to a very good dish that poor has nothing considering the tradition now centuries and the wisdom of popular cuisine behind you. If you think that the poor ingredients make the recipe simple and easy realization you are wrong and this knows who has had the opportunity to eat this dish on different occasions from different cooks. the recipe is simple but not unique, as it is not unique the processing of the chickpea flour, of the times of rest of the batter before the realization of the pancake, of the thickness of the panel, of the temperature of the oil and of the cooking time, so it is valid for the crocchettes (regorously of potatoes) other preparation that accompanies or not the first. As much as I can be worth my opinion I highly recommend trying to get a panelle and potato croquette in this frying: has always given justice to a tradition so rooted in the territorial fabric of Palermo and Sicilian; it has never worked cheating on taste and quality and this says long on a recipe and preparation that obviously are strictly respected and handed down of family. I was started to their street kitchen as a child (and many years have passed) this was a vice that conditioned me in evaluating the quality of the product wherever I gotassi and I always come back to taste the originality, the history of Sicilian cuisine, the ancient taste, when I nostalgia, desire to feel an integral part of the territory, when I want to relive the spectacular magic of an exquisite food came out with basic elements produced by nature: water, salt, chickpeas, potatoes, pepper, parsley, mint: an alchemy! Great judgment, experience to do. The frying is open in the morning and closes the panels and croquettes prepared for that day so I recommend not to go beyond and not on Sunday.
