After a salmon carpaccio as well as a cattle carpaccio, both very neat, we got thin (about 2 mm) carving as hunters or Hawai carving. the meat with just as thick panad had probably been lying too long in the pan. a similar dry piece, which was only cutable or tearable according to the meat fibre, came to the complaint that the meat was not even cutable. our understanding was that such thin slices have never been preserved in Germany as carvings - a meat taste could not be perceived by the thin meat lobe with the panade. a great disappointment after the ordinary appetizer.
