Proto's Pizza - Lafayette

Very good pizza. Always fresh and good. I wish they had more special pizzas. The menu hasn't changed in years.

Proto's is very good pizza. If you like thin-crust pizza, this has a nice selection of gourmet pizzas at a good price.

In 2018 my husband and I discovered Proto’s the Longmont location and fell in love with their thin crust and innovative topping combinations. We were thrilled to see this March that there is also a location in Lafayette, and we recently gave that a try. My husband loves the Tomato Pie “Proto’s own red sauce, crushed Italian tomatoes, Kosher salt and oregano” . And no cheese! It is meant to be that way! My go-to pie had been the Ruby pesto sauce, mozzarella and feta cheese, Kalamata olives, and artichoke hearts. But at the Lafayette location I discovered the Pontiff – I think I may love it even more. No tomato sauce, but so many fresh flavors – olive oil, garlic, fresh spinach, roasted tomatoes incredibly flavorful! , mozzarella and feta. This is one delicious pie. We’ve also enjoyed the salads – particularly the Caesar and the Capri Salad “romaine, sliced ham, hearts of palm, and corn, tossed in extra virgin olive oil and balsamic vinegar” . We added a bit of feta and it was perfection – the crisp fresh corn really makes that salad. Just like the Longmont location, the Lafayette location has that incredible thin and crisp crust, and great service. We love Proto’s!

This pizza is gooood! We chose the Proto Pie with Italian sausage, crushed tomato and basil the first night. The Italian sausage is sliced rather than crumbled. Went back the second night and had two more pizzas. Substituted pepperoni on one side of the Proto pie and got a Margherita pizza. Both excellent. The pepperoni was very good. The crust is the real test, thin and crispy, just a little salty, excellent. We took the pizzas to go. The restaurant has a bar and a warm atmosphere. There are several locations in the Northwest Denver area. Price may be just a little high for pizza but it definitely was worth it to us.
