Mimi's Tacos - Maxwell

The quesadilla was sooo good and the women working were super friendly!

Large burrito which was mostly beans and rice but still decent. Tacos were better, but meat was a little dry or overcooked. Decent option somewhere in the middle of my taco trucks experiences.

While road-tripping, saw this place pop up on Google Maps. Off we went. Mimi's is a taco truck run by the NICEST woman, and let me tell you the two burritos we got chicken and beef) were the tastiest we've had in ages. We could have eaten them at picnic tables under her canopy, but instead devoured them on the road. Very happy to have come across Mimi's!Parking: Located in gravel parking lot

Wow this place is a hidden gem. I wanted carne asada burrito so we looked for nearest place and this came up. It's a small little town looks a deserted. This is a taco truck and is worth it. ?

The tacos here are not bad at all. I'm kind of curious to try there other dishes, but that will be on a later date as I'm heading back home. Card accepted too which is very convenient for me.
