The fish soup tastes like fresh fish, the mushrooms are cooked perfectly, and the vegetables are lightly cooked, allowing their natural flavors to shine through. The sauces are delicate and never overpower the delicate taste of the fish. This restaurant showcases the best and cleanest flavors of seasonal ingredients. The poached oysters are delicious. I highly recommend ordering omakase style, where the chef decides for you. Contrary to another review that found Charles, the chef/owner, arrogant, we find him friendly, willing to share his expertise and clearly passionate about his craft. This is the best sushi/sashimi Japanese restaurant in Melbourne.
While on holiday in the area, we stumbled upon a fantastic gem for Japanese cuisine. Recommended by the hotel concierge, we were initially surprised to see a Western chef at the sushi bar. However, we quickly learned that this was not a tourist trap. The chef, who is also the owner, and his Japanese wife have spent 10 years in Japan honing their skills in sushi and Japanese cuisine. The result is a traditional sushi experience with a touch of Western hospitality. Every ingredient is incredibly fresh, and each dish is prepared right in front of you (if you choose to sit at the bar). The menu changes daily, so we came back the next day to try more dishes. While the service may be a bit slow due to the small size of the restaurant, the evening was well worth it. Expect to pay around $110 for two people for a memorable dining experience.
The food at Jamon is the perfect blend of unique, creative, and fresh flavors that stand out from other Japanese restaurants. However, our dining experience was marred by disappointing service and Charles' arrogance. It was evident that Charles favored regular customers over newcomers, leaving us feeling unwelcome. Unfortunately, we will not be coming back to Jamon in the future.
Sushi were fresh. deco was not bad for a very small restaurant and the service was ok too
I can see why some people find Jamon a little off putting. It's a tiny place and you will either gel with the Charles the owner or you wont. Having said that, Charles is an expert when it comes to serving the freshest and best quality sushi and sashimi in Melbourne (he trained in Japan for years), The best bet is to just tell him to arrange everything, sit at the counter and jump right into the atmosphere and quirkiness of it all. I love Jamon. My wife loves it. We have taken friends there and they have all loved it. Charles has a good sense of humour and he loves what he does. If you're celebrating or want all the pomp and ceremony of 5 star restaurant, then Jamon isnt the place probably for you. He's got an amazingly good selection of wines for a tiny place. And some great Japanese beers (as you would expect). You will not eat better Japanese anywhere in Melbourne by someone who cares so much about his craft, all prepared right before your eyes.
