This restaurant, located within the boundaries of the beautiful abbaye de fontfroide and its surrounding herbacious hiking trails, was the culinary highlight of this vegan sud de france trip. they offer a three-course seasonal vegan menu and, beside this, an oral selection of sorbet aromas! we ate a starter of the chilled melon soup with muscat gele followed by a bowl of grains with fennel, mangetout, water cresss and topped with petits falafels that rival my own. it's a rather expensive place, but the service was amazing and I thought the menu really imaginative. a clear repeater!
