In this elegant restaurant, in which the service is very nice, I almost would not have expected preparations of an extreme simplicity, without ornaments of sort. I refer, for example, to the roasted lamb, exceptional in quality and essential in the binding. This approach, of course, was a very welcome surprise, because I always think it is desirable not to devote more than much attention to the ephemeral, so that I can concentrate almost exclusively on quality.
