Some establishments serve all three major meals—breakfast, lunch, and dinner—such as popular fast-food chains, diners, hotel restaurants, and airport eateries. Conversely, some restaurants specialize in a single meal, like pancake houses that focus solely on breakfast, while others may serve just lunch and dinner. The concept of a restaurant as we know it today emerged at the end of the 18th century, with the first recorded usage of the term linked to a public venue for ordering food dating back to that era. Notably, in 1765, a French chef named A. Boulanger opened a business selling soups and other restorative dishes, believed to be one of the first to present a menu of choices. The first official restaurant is often credited to La Grande Taverne de Londres in Paris, established by Antoine Beauviliers in the late 18th century. According to culinary historian Brillat Savarin, this restaurant was the first to combine elegant ambiance, attentive service, a quality wine selection, and exceptional cooking. Restaurants can be categorized in numerous ways based on factors such as the type of food (e.g., vegetarian, seafood, steak), the cuisine (e.g., Italian, Chinese, Mexican), or the dining style (e.g., tapas bar, buffet). They also differ in terms of speed, formality, location, cost, and creative themes like automated dining. The spectrum of restaurants ranges from casual, affordable dining spots serving simple fare to upscale venues offering gourmet dishes and fine wines in a formal atmosphere. In casual settings, patrons typically wear informal clothing, while in more upscale establishments, attire may range from semi-casual to formal, depending on local customs. Generally, at mid to high-end restaurants, customers order from a waiter who serves their meals, and afterward, they settle the bill. In places like workplace cafeterias, the process is more self-service, where diners select their meals and pay at a cashier before eating.
