Feedback gevenDon't count on finding vegan choices at Hong Kong Airport. I was glad to have some limited options at Pret a Manger. It's a bit pricey, but that's what you'd expect for food at both Pret and an airport.

Roasted sweet potato smeared beet HKD42 A colourful salad box of roasted sweet potato, crushed beetroot hummus, avocado and broccolini on a bed of salad leaves. Finished with a mixture of soybeans, pomegranate seeds and a pot of Ancho Chilli Dressing. There are smoothies and juices available, as well as a vegan Chia pudding and oats. However, the sandwiches all contain egg. For better options, head to Root98 at the other end of the arrival hall where they offer fresh juices, beautiful vegan sandwiches, and salads. If you're looking for vegan Chinese food, Crystal Jade is also a good option.
I have visited Pret a many times because it is convenient and perfect for when you're on the go. My go-to dish is the sweet potato and beet hummus salad, but I find the portion size to be too small for the price of $42. The salad is mostly comprised of lettuce, with a couple slices of avocado, a few edamame beans, and sporadic pomegranate seeds. The flavors are fresh and tasty, but I wish there were more vegan options available. Pret should consider expanding their vegan menu beyond just one sandwich and one salad option at most locations (though they do offer vegan overnight oats and chia seed pudding, which are not to my taste).
