This brand offers homemade bubble tea, spring rolls, bowls and soon soups. I received a very warm welcome, and the decor is very cozy. The good idea of cutting up the spring rolls makes it very pleasant to swallow them. The 100% vegetable juices and sweet versions are very creative and very tasty with very good sauces like Pesto: Savory: Spaghetti or Risotto of Chanterelles Sweet: Mango or Caramelized Apples The oat milk bubbles are very diverse and not very sweet, which is remarkable. In short, a perfect and welcoming place to have lunch or dinner without weighing your stomach. Updated by previous review on 2022-01-16
UPDATE 2022/06/04: NOT VEGAN ANYMORE, they announce it on their Instagram. Updated by previous rating on 2022-06-04

I don't get this place. They changed the menu again and now they offer non vegan sushi and dishes. They say they still have vegan options; but who knows, maybe in 10 days they will change their minds again and you'll be surprised not to find anything vegan any longer. Too bad because the place is rather cosy and the location is great, right in the heart of the Marais. Second time at Bulle and I must say I was disappointed. I understand they want to evolve from serving spring rolls to something else, and that's completely fine. However; not only is not fully vegan any longer (they started serving vegetarian sandwiches); but also, the service was chaotic and very amateurish. Once you get to the seating area it's much better because the place in itself is cozy; and the cakes are nice and generous. I really hope they will come back to being vegan soon, and find some concept which sticks through time. Updated from previous review on 2022 02 20
