Wow, my boy, have we had an excellent dinner here. We all added the bunny dish to an already complete seven-course menu. It is important to know that several dishes consisted of several plates for a complex dinner in colour, texture, spices, softness, sour and unami that were all balanced. So fun to anticipate food and such a pleasure to enjoy it. Difficult to say what was the culminating point, but the rabbit ballantine with spinach and purée with red onions was certainly a competitor. Of course, I highly recommend it. One should know that several courses consistd of multiple plates making for a complex dinner in color, texture, spices, sweetness, sourness and unami that were all balanced. So much fun to anticipate the food and such a delight in enjoying it. Hard to say what the highlight was, but the ballantine de lapin with spinach and red onion pure certainly was a contender. Obviously, highly recommend.
