Bistoro - Pueblo

What a lovely small restaurant! We spent the night in Pueblo while heading to Aspen, and it was just four blocks from the downtown Marriott, making it super convenient. We ordered the tapas tray, and it was packed with wonderful flavors. The vinho verde we had with it was delightful as well. The service was excellent, and the Elena panini was delicious. I highly recommend this restaurant if you're traveling through Colorado!

Some of the best chicken in town I order a custom order just chicken with sweet potato fires on the side the owners are wonderful people not like the mean restaurant owners that get mad when ever you asks to change some thing the cook and ownercomes out to. Hug me the other Owner dose to

Fantastic Experience! Everything from entering to dessert was exceptional. This has become my new favorite spot in Pueblo. The staff is wonderful, and the food is amazing. Katrina was incredibly patient and helped me choose the perfect wine to pair with my meal, making the entire experience feel festive. If you're in Pueblo and looking for a cozy, romantic, and enjoyable place to eat, make Bistoro your first stop—chances are, you'll want to stay!

The Summer 2022 menu at Bistoro is outstanding! The steak paired with the red pepper sauce is absolutely fantastic, and the new Basque cheesecake with its glassy, crackling caramelized top is simply delicious. I'm a fan of Gimlets, and this one captures all the flavors of summer with its hints of rosemary, lime, and cucumber!
