I lived in Tuebingen almost 8 years before I went north to Frankfurt and often returned to Tuebingen and surroundings and about two years ago after the end of the city's international chocolate festival, I hoped to find some really good Swabian food before I went home. Most people will tell you that truly extraordinary Swabian food is hard to find in the university city, unless you are ready to go to an elevated place, but then that defeats eat local cuisine as it should be eaten. Hidden on the deer in Kiebingen, closer to Rottenburg than Tuebingen. Have eaten 4 times and have NIE a little less than delicious. Yesterday strings, with Alb Lentils and homemade sparrow was a case at the point. This typical home meal has been prepared in something new with lenses so delicate that you can not recognize any indication of the sometimes acidic taste of the lenses when they are cooked as they are so often. The fladle soup was loaded with strips of delicious pancakes and the accompanying salad with the main dish was a mixture of veggy pleasure and a light dressing. The owner is originally from Switzerland, while the other owner, his wife, makes cooking. I also tried other entrees here, like Kasspatzle or Schnitzel, and everyone was a meal of pleasure!

Most people will tell you that really exceptional Swabian food is hard to find within the university town unless you are willing to go to an upscale locale but then that defeats eating local cuisine as it is meant to be eaten. Stumbled upon zum Hirsch in Kiebingen, which is closer to Rottenburg than Tuebingen. Have now eaten there 4 times and have NEVER had anything less than delicious. Yesterday's Saiten, with Alb Lentils and homemade Spatzle was a case in point. This typical home meal was transformed into something new with lentils prepared so delicately that you could not detect a hint of the sometimes sour taste the lentils can acquire when cooked as they are so often. The Fladle Suppe was loaded with strips of tasty pancake and the accompanying salad with the main dish was a mixture of veggy pleasures and a light dressing.
