I was grateful that the bartender informed me that the regular French fries contain chicken bouillon. There are two breakfast options available, which are oatmeal and a plate of tofu eggs, toast with jam, hash browns, and vegetables.
This restaurant has a variety of vegan options clearly marked on the menu. I tried the vegan yellow curry and was pleasantly surprised by how delicious it was! Although not very spicy, the vegetables and tofu were cooked perfectly, making it a satisfying lunch option. If the restaurant is busy, they may take away your reservation, so it's best to book ahead. They also offer a vegan quinoa salad and a vegetarian burger with a veggie patty that can be made vegan by substituting a beyond burger. For early risers, there is a vegan breakfast available until 11:30am (which I did not try). It is refreshing to find tasty vegan food at an airport restaurant and I hope they continue to add more vegan options in the future.

Needed a good breakfast and groundless coffee with oat milk. Squatters took care of me.
Among all usual airport food sites (eggs, cheese, bacon, etc. Squatters actually had elections. I got a beautiful tofu cubes with broccoli full wheat toast, and they were ready to replace a bowl of blueberries for the hash brown. All this for less than $11 in a sitting airport restaurant was amazing! Even the soup of the day was vegan!
