Feedback gevenGreat selection of beer. These guys are on the verge of greatness. The Omerta is a delicious imperial stout. Push Pull is a favorite, with the 2 Hop IPA. This brewery focuses on traditional barrel aged brew. If you love beer than you'll enjoy stopping by and tasting some of the finest brew to be made.
What a great little brewery in the heart of Sparta! This former Kroger store has been remodeled into a warm and welcoming room. All the attention's on the beer, with no food available on site. Both their website and Facebook show what brews are currently available; today's menu included eight of their own and a couple guest taps. Several choices had an ABV under 4; one of the sours was just 3 and nothing's over 6.5 (I tend to check those numbers when I'm the designated driver. We tried six White Rooster beers and enjoyed them all, including two Kairos sours (cherry-plum is sour and mango-guava is really sour , a porter, a peach blonde, and a really interesting Grodziskie (Polish style with smoked wheat. Bar staff was knowledgeable and made recommendations when we deliberated over a third round. Hours are currently different than listed here, perhaps because of COVID-era adjustments. Signage indicated that masks are required. There's distanced seating available on the patio, and indoor seating as well.
Sparta has a population of about 4,000 people give or take. I'm always very skeptical about going to a brewery in such a small town, the bar is usually set pretty low. A lot of times its just generic beer that has no competition so there is no attempt to make it good. My in-laws are from Sparta and we were visiting so what the hell there is nothing else to do lets check it out. VERY IMPRESSIVE set up and beer. The building is beautiful both on the outside and in, lots of seating, very clean, wide open space. The beer was really good, especially the kettle sours, very full flavored beers with complex flavor you would not expect from a small town brewery. I'm also not a very big saison fan but their red corn saison was one of the better ones I have had. If you are anywhere within 50 miles I would say check this place out it was much better then what I was expecting.
We were definitely a fan. The beers are More abstract than most. Not traditional beers. We loved the foerder aged beers. Tart/sour and crisp without being heavily fruited. We tried several tasters and the tea inspired flavors were good too. Especially the one with rooibos tea. Cool space too. Worth the stop if you are going thru the So-IL beer trail or back from Kincaid.
This place is a GEM. If you are in the area stopping in is a must!! There isn't a bad beer on tap, but Elliptic is something special. The owners are great conversation and good hearted people. 15/10 recommend!
