Hedone is for us an annual meeting for all our occasions. We discovered L’Hedone and Balthazar when it offered a unique menu with a unique table and a wine and music pairing. We fell in love immediately! Over the years we have been able to witness the rise of hedone and chef Balthazar. But for us it was obvious at the first bite when we sat down at his table for the first time. It’s the only starred one that we make again and again with the same enthusiasm and being amazed each time. The dishes are sublime both visually and in the mouth. The service is young but very attentive, professional and modern, you immediately feel at ease. And then what can we say about the chef, we love him, he is generous and you can feel it in the dishes, he is passionate about his job, for me he is a culinary genius.
