The restaurant I only knew him by name until now, but today at lunch I had the pleasure to attend it for the first time. Mezz 'oretta first however, wanting to know exactly the various types of dough they used for their pizza, I made a phone hit and I think I answered the owner, who with extreme kindness and patience, has listed all the doughs I believe 5 or 6... that they offered to satisfy the many types of clientele. I personally, being diabetic for about 1 year and a half, I had the need to find not only a classic integral dough, already good for the purposes of the glycemic index, but to find the famous kamut wheat, which alone has a glycemic index of 40 regarding the very high of the classic 00 or 0 flour that touches the 90. And so I discovered that they had in the menu a dough formed by Kamut, Riso and Farro called KaRiFa with the Kamut and the Farro with low glycemic index and instead the Rice that unfortunately has it quite high. I think not experienced in pizza dough that rice serves to amalgamate the other 2 elements and make them perhaps more pleasant from the organoleptic point of view, but so it is.I am pleased to know that the 2/3 of the dough are low IG. I then enter the room that has on the outside a lovely covered terrace, and I am facing a very but very nice restaurant, not the usual pizzeria with furniture made of tables and chests made of raw wood but a luxurious decor in noble dark walnut wood? with comfortable chairs and chairs with beige padding very comfortable for terga as well as very beautiful aesthetically. So I order my pizza with the KaRiFa dough and as ingredients of garnish mushrooms, sausage and eggplants as well as mozzarella and tomato sauce. After a few minutes it was already on my coffee table, besides that the owner Mrs. Sabina kindly replaced me independently the bottle of mineral water that in the meantime I had already opened, with the sparkling one I had ordered but that for a trivial distraction, the waiter had brought me a natural I didn't even notice... . In addition to this they put me on the table a delicious organic extra virgin that on the boiling pizza it tasted extraordinary aromas. The pizza was exceptional for both the dough and the quality and abundance of selected ingredients, as well as the perfect cooking. I am sincerely rare times I found myself in difficulty finishing a pizza as this time, all attributable to the abundance of ingredients as well as to the nature of the same, not properly dietetic sausage and mushrooms n.d.r. but that I myself wanted. The lightness, digestibility and low glycemic index of the dough, still remain saved and this was my goal. I end with a great coffee that I drink normally bitter, I can understand and appreciate the qualities more easily than those who drink it with maybe 2 sachets of sugar. Also the bill perfectly in line with the quality of the food eaten, but I would like to dwell again on the surprising courtesy, kindness and care of the customer, that often, especially in recent years, has gone off and often disappearing, from all the staff, starting from the owner heard on the phone, from the waiter who with precision and appropriate language, welcomes me inside obviously checking the correctness of my natural Green Pass, to end with courtesy Sabina absolutely The staff constantly follows you from the beginning to the end by informing about the liking or not of their product but without it being intrusive as it could sometimes happen. I finally apologize with Mrs. Sabina if at the time of payment I educed it on the peculiarity of Kamut for those who have diabetes, pulling it a little long.
