The server claimed that the saltiness came from the soy sauce base, but I suspect the recipe was not prepared correctly, and they were hesitant to address the problem. I tried to add more broth to dilute the saltiness, but even half a bowl of broth didn’t help. They couldn’t even provide plain hot water, which is what was really needed. It seems like the staff here may lack the experience to keep customers happy. I doubt even the owners would find this dish enjoyable.
Incredible ramen! Having lived in Tokyo for three years, I feel a sense of nostalgia with every bite of their Ajitama eggs. I also love that they let you choose your spice level. This place is a must-try!
This ramen place is fantastic! I ordered the tonkotsu ramen with pork belly, and it was perfectly crafted. The yolk in the egg was slightly runny, which added to the overall experience. I've visited many ramen spots, but I really love this one. If you're in the area, definitely give them a shout!
So I came to visit Union Hall soon after returning to Waco and chose to get a bowl at Koko Ramen... man was it great! I got the tonkotsu ramen and bao buns! The broth is rich, the pulled pork is smokey and tender, the noodles are cooked to a perfect balance of soft and al dente, where it's soft as it should be yet still toothsome. The boa buns with pork belly are where it's at, fresh cucumber and jalapeños with hoisin drizzled on! GET AN EXTRA AJITAMA EGG! They've got the brine down to a potion and you'll know on the first bite! I will definitely be returning, as should you if y'all get to give it a try! Level 4 Bowl is the perfect spice btw!
The eggs and brisket Rangoon stole the show. Broth was a tad bit salty, but other than that, quick friendly service! On the counter, They have disposable soup spoons and chopsticks as well as a self serve roll of paper towels. They have Japanese ramune soda as well.
