There were other things besides oysters: octopus, lobster, crab, but once I saw the oysters, I was transfixed. I ordered a dozen before we were even seated. And they were fabulous! I've eaten oysters all over the world and there are a few standouts; Japan, France, and the oysters they served me at El Pargo were right up there with the best of them. These were Atlantic oysters cultured in Naryit, a few miles down the road. Perfectly formed, firm, icy cold, and orgasmically delicious. Really. The second I put the first one in my mouth, the world stopped. There was nothing but me and that oyster. Then of course came a Modelo Especial that was just as cold and I was about as content as a person can be.The other dishes on the menu stood out as well. Their shrimp looked especially good so I gave them a try and they were honestly the best fried shrimp I've had in more than a decade. Cooked to perfection, still sweet and tender. My friends sampled various other dishes. The fish of the day was Dorado, cooked to perfection like everything else. We also had shrimp ceviche, also top rank, and then some fish ceviche to balance it out. Prices were moderate; very inexpensive compared to the US.No room for desert alas, but then the receptionist wandered past with free shots of fine Tequila to top of the meal. Who could possibly refuse that! The naturally lit decor is open and airy with lots of space and privacy. I'm pretty confident that it has a definite Romantic aura in the evening hours. Covered outside dining if you are in the mood.Altogether, I rank this restaurant among the 10 best I have visited anywhere in the World. After I've been back a few more times, I may need to bump it up.
A. Valle
